Vegan superfluff pancakes FTW!

Risking my life for science and putting myself under the most extreme conditions (which means, uh, into our kitchen), I recently discovered the secret ingredient that makes your yummy vegan pancakes even more awesome and perfectly superfluffy. It is... the almighty custard powder! Nomnomnomnom... enjoy!


Ingredients:
(For about 8 pancakes)

+ 1 cup flour (I use wholemeal)
+ baking powder
+ 1-2 Tbsp custard powder (I recommend: caramel flavor)
+ a little bit of salt
+ sugar (amount after your fancy)
+ 1 cup soy milk

+ cinnamon/Xmassy spice mix (optional (a very nice option I must say))

Fabulous comics and the recipe might be interesting too. I drink soy milk and take it with cereal, but I have always wondered if you could heat it like milk. Apparently you can. Good to know.

@Caatje: You can certainly heat it and if you're already at it you can froth it up and make some glorious hot chocolate (or make cake with it or custard or anything else you usually do with cow's milk).
